Smoked Sausage & Peppers Po-boy

Ingredients:

 

1 lb Smoked Cajun sausage

¼ cup Olive oil

1 Red bell pepper

1 Green bell pepper

1 Yellow bell pepper

1 Orange bell pepper

1 Red onion, thinly sliced

4 Garlic cloves, thinly sliced

2 tbsp Tomato paste

1 can (15 oz) Diced tomatoes

2 tsp Cajun seasoning

½ cup Louisiana Amber beer

3 Evangeline Maid Po-boy buns

 
 

 

Directions:

 

Sausage:

Place sausage on the grill and cook till lightly charred.

Peppers:

Lightly grill. Once coals are ready for cooking, place a 12” cast iron skillet on the grill, and add oil. When the oil is hot, add garlic and cook till fragrant – about 30 seconds then add peppers and onion stirring to coat with oil. Add tomato paste and diced tomatoes, stir to combine then add seasoning stir. Add beer and continue to cook for 10 minutes.

Sandwich:

Place two halves of sausage in the Evangeline Maid Po-boy bun, add peppers, and serve.
